The Mozzarella di Bufala Campana P.D.O. is produced exclusively with pasteurised fresh whole milk, from registered Italian Mediterranean buffalos of bred and farmed in Salerno and Caserta.
Cow’s ricotta is produced with milk, cream and cow’s milk curd: for this reason, technically, it is also called “curd cheese”. It has a soft, creamy, velvety texture, white colour and mild taste; it is very easy to digest and has high nutritional value, a substantial amount of “noble” protein and low fat content.
Finally, Fior di Latte is an Italian spun cheese produced from cow’s milk. The taste is milky, fresh and delicately acidulous. In addition to the main nutrients such as proteins, carbohydrates and fat, fiordilatte mozzarella also provides calcium and phosphorus.
